Big Mouth Blogging goes fishing with My Fit Foods

Yesterday evening I decided to go fishing. In my refrigerator that is.... I pulled out the next selection in what I picked up from My Fit Foods in Tulsa. Even though it was classified as a lunch the Blackened Tilapia  made for actually a perfect dinner for myself. I offered some to the hubby, but due to his high sensitivity to spice,  he deemed it all mine.
This tilapia was some of the best I have had in a long while. Perfectly seasoned fish made a great protein selection, along with the compliment of fresh, crisp green beans and quinoa. A little squeeze of fresh lemon brought the dish together quite nicely and rounded it out successfully, along with the herb in the quinoa. ( I did not even miss the tartar sauce with this dish, and herbs added a brightness. The brightness of flavor of the dish paired well with some 1/2 cup portions of mango and pineapple bits.Please forgive the dirty microwave,the "maid" has not come yet.)
 
For a quick and simple lunch turned dinner, I can high recommend this dish to all the fish, herb and veggie lovers out there. You will really enjoy this dish, and for the tartar sauce lovers, as mentioned before you will not miss the tartar sauce at all with the fresh lemon. The quinoa added a nice little pop of  color and the green beans had a great crunch to them as well.
